Homemade keto chocolate coconut ice cream dessert recipe

One of the most delicious food missing from doing ketogenic diet is the dessert treat after a meal. You can actually make your own keto dessert which is delicious and keto friendly at the same time.

This is my own homemade keto coconut ice cream recipe for self reference and recording. You can customize and make your own special keto coconut ice cream according to your preference.

Ingredients for homemade keto chocolate coconut ice cream

  • Coconut milk / coconut cream
  • Melted cacao mass / cacao powder / sugar-free dark chocolate
  • Vanilla extract
  • Salt
  • Lakanto (monk fruit sweetener + erythritol)
  • Egg yolk
  • Stevia
  • Kombucha with higher alcohol content
  • Mix-ins
    • Cashews
    • Hazelnuts
    • Cacao nibs

Steps-by-steps tutorial in making homemade keto chocolate coconut ice cream

  1. Pour coconut cream into an ice cream maker or a mixing container.
  2. Put in a pinch of salt.
  3. Put in vanilla extract.
    • Amount is based on your preference, more is preferred as to lower the freezing point of your ice cream which is without sugar.
  4. Put in Lakanto (monk fruit sweetener + erythritol).
    • Erythritol is a sugar alcohol which lowers the freezing point of your ice cream, taste sweet and keto friendly.
  5. Pour in melted cacao mass.
    • You can also put in cacao powder or melted sugar-free dark chocolate instead.
  6. Put in pasteurized egg yolk.
  7. Pour in some alcohol.
    • Red wine, kombucha with higher alcohol content, rice wine
  8. Mix everything together with a blender.
  9. Put in ice cream maker for 1 hour.
    • If without an ice cream maker, you can put in the freezer directly, but have to stir the mixture every half hour for 2 to 3 times (to prevent large crystal forming for smoother, fluffier and scoop-able ice cream).
  10. Put in some cacao nibs.
    • You can put in any mix-ins of your own preference like cashew nuts or hazelnuts.
  11. Enjoy your ice cream or put your ice cream in the freezer to enjoy anytime you want.

Freezing point

The major difficulty in making homemade keto coconut ice cream is the missing sugar content in the ice cream, where the sugar plays a very important role in making the ice cream soft when put in the freezer. Sugar lowers the freezing point of the ice cream. The more sugar you have in the ice cream, the lower freezing point and softer the ice cream will be.

In order to lower the freeing point of our homemade keto coconut ice cream, alcohol and salt can be used to substitute sugar. Vanilla extract usually comes with high alcohol content, which you can put more into your ice cream to lower the freezing point so that your ice cream won’t get frozen hard solid in freezer.

Ways to lower the freezing point of your homemade keto coconut ice cream

  • Alcohol
    • Red wine
    • Vanilla extract
    • Kombucha with high alcohol content
    • Rice wine
  • Salt
  • A custom freezer
  • Thaw in fridge for a while before serving

A mini custom freezer

If you have freezer which can adjust the temperature between 0 degree celsius to -16 degree celsius, you can actually increase the temperature of your freezer so that your ice cream won’t get frozen solid and you can adjust the temperature to get own preference and optimum softness / hardness for your ice cream.

Frequently asked qeustions / troubleshooting

My homemade keto coconut ice cream is frozen hard solid on the next day in freezer.

There are a few ways to prevent frozen hard solid for your keto coconut ice cream:
  • Add more alcohol like red wine or stuffs with high alcohol content like vanilla extract and kombucha.
  • Add more salt
  • Use a custom freezer where you can adjust and increase the temperature of your freezer. 
  • Thaw your frozen ice cream in fridge for a while before serving, or thaw outside for a while before eating.
  • Finish eating your homemade keto coconut ice cream within few hours after making to prevent your ice cream from staying too long in the freezer and becoming frozen hard solid.
