Homemade keto chocolate coconut brownie gluten-free dessert recipe

This is my version of sugar-free, gluten-free keto chocolate brownie using coconut flour. You can refer to my recipe and then customize and experiment with different ingredients according to your own preference.

Ingredients

  • Eggs / egg yolks
  • Coconut flour
  • Butter
  • Cacao mass
    • Alternative: Cacao powder, sugar-free chocolate
  • Lakanto (monk fruit sweetener + erythritol)
  • Stevia
  • Vanilla extract
  • Salt
  • Sour cream / cream cheese / full cream greek yoghurt
  • Nuts
    • Hazelnuts, cashews, almonds
  • Almond flour
  • Coconut oil
  • Herbs and spices for extra flavors
  • Juice
    • Kombucha
      • For extra fruity flavor without any fructose and glucose.
    • (optional) Lemon juice

Step-by-step tutorial for homemade keto chocolate coconut brownie

  1. Break eggs into a blender container.
  2. Put in coconut flour.
    • You can replace with almond flour or mix both together.
    • Coconut flour tends to be more flavorful, better aromatic fragrance and sweeter taste.
  3. Put in butter.
  4. Put in melted cacao mass / cacao powder.
  5. Put in sweeteners such as Lakanto sugar and stevia extract.
  6. Put in vanilla extract.
  7. Add in a pinch of salt.
    • To bring out the flavor of your brownie.
  8. Put in some sour cream / cream cheese.
  9. Put in some diced nuts.
  10. Pour in some juice.
    • Kombucha for extra fruity flavor
    • (optional) Lemon juice for a little sourness and extra freshness
  11. Blend everything together
  12. Coat a baking pan with coconut oil.
  13. Pour the mixture into the baking pan.
  14. Put the baking pan into the oven together with a cup of water.
    • The water will smooth out the temperature to give a beautiful smooth surface of your brownie, without cracking on top.
  15. Bake for 1 hour at 140℃.
  16. After 1 hour of baking, let the brownie sit inside the oven for a while.
    • Either let the brownie rest in the closed oven or open the oven a bit. This is to make sure the brownie doesn’t cool down too fast and cause a cracking on top.
  17. Serve and enjoy your delicious keto and gluten-free brownie.

Notes

The amount depends on your preference and the size of brownie you are making. Experiment with different amount of ingredients to get your own version of perfect brownie.


Frequently asked questions

Why is my brownie appears to be very dry?

Try to put more butter, fats or oils and lesser amount of eggs and coconut flour. In making brownie, dryness is determined by the amount of fats, not water.
