You can brew your own water kefir at home using water kefir grains.Ingredients
The basic ingredients needed are just the main water kefir grains, water, sugar and a bottle.
Step by step tutorial in making homemade water kefir
- Add sugar into a glass container with warm water and completely dissolve them.
- Wait for the solution to cool down or pour in some cold or room temperature water to bring down the temperature to normal temperature
- Put in water kefir grains.
- Cover with a cloth on top using a rubber-band.
- Leave the bottle in a dark, warm condition (cupboard) to ferment for 1 day to 3 days.
- The fermenting duration depends on the amount of sugar, the amount of water kefir grains, and your preferred sweetness and acidity).
- After few days of fermenting, strain the water kefir grains to make a new batch while using the solution for 2nd fermentation or drink directly.
- Add your own preferred flavoring into the solution and let it ferment for 1 day.
- The duration to ferment depends on the amount of sugar, the amount of water kefir grains, and your preferred sweetness and acidity
- After the 2nd fermentation, you can drink directly or keep chilled in the fridge and serve cold.
- Chilled water kefir soda is recommended since it retains more gas (carbon dioxide) better and the a better, fizzier water kefir soda. Cold water kefir soda is more refreshing as well.
Water kefir grains
Water kefir grains will thrive better under certain circumstances and conditions. Here is a short list of water kefir grains preferred growing conditions:
- Airtight: Both aerobic (require oxygen, non-airtight with a cloth on top) and anaerobic (without oxygen, airtight) work fine.
- Higher water pH: Water kefir grains don’t like acidic lower pH water or solution.
- You can add sodium bicarbonate (commonly used in baking) to reduce the pH of the water solution.
- Try to rinse the water kefir to make a new sugar solution which is not acidic instead of using the old batch and continuously adding water into the water kefir solution.
