Water kefir recipe

This is a simple water kefir guide and instruction for beginners. Making your own homemade water kefir is very easy and you should try it out if you are doing ketogenic diet. You can finally enjoy fruity carbonated drinks without any sugar (since all the sugars will be consumed by the water kefir grains) with added probiotics benefits.

Water kefir is known to have more probiotics compared to Kombucha, and it’s easier to make your own homemade water kefir compared to Kombucha which needs an extra step to brew your tea.

1st fermentation process

Ingredients, tools and materials needed

  • 25g of water kefir grains
  • 25g of organic brown sugar
    • 100% organic brown sugar
    • 70% organic brown sugar, 30% coconut flower sugar
  • 250 of boiled water (room temperature)
    • 1:1:1 ratio
  • Glass jar
  • Clean cloth to cover jar
  • Plastic Strainer
Take note: Use only plastic or ceramic tools

Steps

  1. Pour water into a glass jar. Add sugar, water kefir grains and stir well.
  2. Cover the glass jar with cloth. Make sure it is not airtight.
  3. Place away from direct sunlight and leave it at room temperature for 3 days. It will have slightly alcohol content.
  4. Drink your water kefir / proceed to 2nd fermentation process / keep in fridge

2nd fermentation process (lemon ginger kefir drink)

Ingredients

  • Few pieces of ginger
  • Lemon juice
  • Bottle with stopper (tall long neck bottle with small cap)
  • Sugar (optional)

Steps

  1. Strain the grains with plastic strainer.
  2. Pour water kefir, ginger and lemon juice in the bottle with stopper. Leave it closely tighten for 24 hours at room temperature.
  3. Be careful when open the cover.
  4. For a better taste (optional): Add a bit of sugar and keep in fridge.
  5. Drink your fruity carbonated water kefir.
